2021 Food Trend: Pistachio

 

Pistachios are not a new nut to mainstream consumers and have certainly had moments of popularity in the past decade, but there does seem to be wave of new pistachio-centric products upon us. In addition to its sweeter flavor and fun green color, pistachios are a complete source of protein, rich in vitamins and antioxidants, and full of vitamin B. With consumers turning to food as medicine - or at least as functional products to aid and personalize their nutrition - pistachios are a healthy food to help proactive consumers balance their diet.


Pistachio as Dairy Alternative

As almonds infiltrate nearly every category of food and beverage, the scrutiny grows. Tache has positioned itself as not only an alt-dairy milk but an alt-almond milk, citing the 97 gallons of water it takes to grow one ounce of almonds. Pistachios on the other hand, take 75% less water than almonds to grow the same amount.

There are still other nuts and grains that are being transformed into new plant-based milk alternatives. Pistachio, pecan, hemp and cashew milks are on the market, as well as new combinations of nuts, grains and proteins. Different flavors are being added to plant-based milks as well, providing a true diversity to what consumers are drinking.”

Pistachio as Beverage

Speaking of that fun green color, it makes pistachio beverages more experiential than its beige counterparts. Disney launched a Pistachio Chai Tea Float for the holidays using pistachio soft serve with sweet chai tea and topped with an ‘ornament’ made from red velvet cake pops. New Williamsburg cafe Borsalia offers coffee lovers pistachio and pistachio-cinnamon options for its cappucino flavors, much like Starbucks is doing right now with its seasonal menu, positioning its drink as ‘specially crafted to keep you comforted and energized in the new year.

Pistachio as Vegan Friendly

While many know the deli meat mortadella includes pistachios, Woolworths in New Zealand have crafted a similar product but with a pistachio base that is vegan, supplemented with pea protein. And if you’re looking for more alternative flours and butters, The Pistachio Factory has you covered. Interestingly enough, this company might have an allergy friendly product on their hands and boast its has been beneficial in managing the founder’s Crohn’s disease.
